Toma Piemontese is a gourmet cheese from the northern Italian region of Piedmont. Hand crafted, Toma can be made in either the mountains or plains of Piedmont and can also be made with many different species of cows. Aged for 90 days, this cheese has a pale yellow color and a soft creamy taste. It is pungent, soft and flavorful. This cheese is a living, breathing organism and could be wet, slimy and quite smelly, for a true cheese lover this may be right up your alley however for the person who is used to highly processed, commercialized cheese this may not be your cup of tea.
