Cosacavaddu Ragusanu, also known as Caciocavallo. This version is slightly more straw yellow in color with grassy, buttery notes. Similar to a more subtle provolone. Great table cheese, or excellent to cooking and melting. Southern Italy has many versions of Caciocavallo, from the rope tied, pear shaped Cacio Cavallo to the large egg shaped balls with small tear drop ends also tied with rope or string.
